Agave Cocina & Cantina restaurant in Redmond is opening a second location at Kent Station, according to a media release from the shopping center. The site is on Ramsay Way at the former Cal’s restaurant location, across from The Ram.

The site features a rustic, brick-walled space with high, open ceilings defined by massive steel beams. There is a cozy bar, open kitchen and gracious interior seating. Two fireplaces and two patios (one year-around) flank the entrance leading to the restaurant’s welcoming reception area.

Mexican art and handy-crafts acquired by Ramos from San Cayetano, near Guadalajara (Jalisco) Mexico, where he was born and raised will farther enhance the already attractive space.

“We had been looking for an additional restaurant location for a while,” Julian said in the release. “When we open Agave Cocina and Cantina Kent Station in May, guests will enjoy Agave’s food and hand-picked sipping tequila selection in a strikingly distinctive setting.”

Menu items such as wood-fired Mexican torta sandwiches, with achiote marinated chicken breast, bacon, pepper jack, lemon scallion aioli cilantro-jicama slaw, tomatoes, pickled red onion and guacamole on a ciabatta roll, join a large selection of appetizers, tacos, burritos, entrees, sides and desserts.

The menu avoids preservatives, lard and is almost 90 percent gluten free and organic whenever possible. For summer, the grilled sirloin steak salad, romaine, tomatoes, avocado, corn, roasted red peppers, radish, toasted pumpkin seeds, quesa fresca and creamy, cilantro lime dressing will be a favorite.

Specialty cocktails feature Agave’s impressive selection of premium, hard to find and limited production tequilas, highlight scratch Margaritas in fresh lime and fruit combinations. The spacious bar also offers a great selection of tap micro brews that will rotate often. Ramos is a tequila expert in his own right, Agave Restaurants host tequila tastings regularly.

• About Agave Cocina & Cantina Restaurants:

Agave Cocina & Cantina opening in late May is a sibling to the Agave Cocina & Cantina operating in Redmond since 2011. Agave Restaurants serve contemporary hand-crafted Mexican food, using fresh, natural ingredients, free of preservatives, trans fats and lard. Sustainable, free-range, hormone-free chicken, pork and beef are menus staples; we also use organic vegetables, eggs, rice and beans.

The Kent Station Agave location will use a Woodstone wood-fired oven to produce signature wood-fired items. The lively bar will delight margarita lovers with the Agave Margarita, craft beverages, complementary chips and salsa and daily Sunday through Thursday specials. Customers also will be able to try a popular Saturday and Sunday a la carte brunch of traditional and Mexican favorites.
